Die Kat Se Snor

Grapes for Die Kat Se Snor Sauvignon Blanc 2021 are from the Hemel-en-Aarde Region in the Walker Bay, just 15km from the Atlantic Ocean. The grapes were hand-picked and chilled overnight before being processed as whole-bunches and pressed to stainless steel tanks for overnight settling. The wine must was racked to older French oak the following day to undergo spontaneous alcoholic fermentation and then malolactic fermentation in barrel. It was then left on gross lees for 10 months. The wine was bottled unfiltered. A harmless sediment may develop over time. Bottled at 14%.
